Time for another Lazy Cook blog. And because I am lazy, I am doing the blog two days later than my normal day of Sunday.
Years ago, I remember doing a cooking project in grade school. What I remember about the project was it involved no baking. It was a simple recipe of crunchy chow mein noodles and chocolate.
I found a variation of this recipe on the back of my Fiber One cereal box. Yes, I am sorry to say I eat Fiber One. The recipe is very simple and uses Fiber One instead of the chow mein noodles. I won’t lie, chow mein noodles are a little more tasty, but the recipe results were good. The kids had no idea what was hiding under the chocolate covering.
Chocolate-Peanut Butter Haystacks
1 bag (12 oz) semi-sweet chocolate chips (two cups)
1/2 cup peanut butter
1 pouch ( 3 1/2 cups) Fiber One cereal
1. Line cookie sheets with waxed paper.
2. In large microwaveable bowl, microwave chocolate chips and peanut butter uncovered on High 1 minute, stirring after 30 seconds. Microwave 30 seconds to 1 minute longer, stirring every 15 seconds, until melted and smooth.
3. Stir in cereal until well coated.
4. Drop mixture by rounded teaspoonfuls onto waxed paper.
5. Refrigerate until firm.
Chow mein noodles can easily be substituted for the recipe, but the recipe will not be as healthy. Just saying.
I am able to cook this recipe thanks to my new microwave. We bought one after we moved into the new house. Very hand appliance.
