Lazy Cook – Pumpkin Spice Cake

My little son’s preschool teacher told me about this cake recipe.  The children made it at school. It has only two ingredients.  It is the perfect for someone who is cleaning out the cabinet before a big move.

Pumpkin Spice Cake


1 package spice cake mix

1 can canned pumpkin (15 oz)


1.  Pre-heat oven to 350 degrees.

2. Grease bottom of 13 x 9 glass cake pan.

3.  Beat cake mix and pumpkin in large bowl, medium speed for two minutes.

4.  Pour into pan.

5.  Bake as directed. ( about 28-33 minutes)

Well,what do you think?  Pretty darn easy.  Those preschool teachers are so smart.

The countdown to the BIG move is one week.  We have nothing packed.  I keep wishing Santa’s elves will realize I need some help and do some packing for me in the middle of the night.

I guess Santa has the elves doing other things.  Bummer.
