A while ago I stopped by my neighbor Sandra’s home to borrow some canned tomatoes. She was cooking dinner. I asked what she was making. She told me pulled chicken bbq sandwiches. It smelled good so I asked for the recipe.
The recipe uses only three ingredients. It also takes less than 15 minutes to put together. Buying a pre-cooked rotisserie chicken is the key to keeping the recipe easy. Check your local grocery store in the cooked food section.
Pulled Chicken BBQ Sandwiches
Ingredients
1 whole rotisserie chicken (pre-cooked)
1/2 cup finely chopped onion
1/2 cup – 1 cup bbq sauce (pick your favorite brand)
Directions
1. Remove meat from chicken. Using two forks, finely shred meat. Put aside.
2. Finely chop onion.
3. Heat oil in pan over medium temperature. Add onions and cook onions until soft. (about 5 minutes)
4. Place pulled chicken into the pan. Cook for a couple of minutes.
5. Turn heat to low. Pour bbq sauce in with the chicken mixture. Cook at least 10 minutes or until heated through.
6. Remove from heat. Serve.
Note: The amount of bbq sauce can be adjusted according to your tastes. I start with a 1/2 cup and slowly add more until I get the consistency I like.
This is a perfect summer time meal. I serve the bbq sandwiches with homemade coleslaw, corn on the cob and cold beer. No beer for the kids of course.
